Ingredients (for 12 bars):
1 cup light corn syrup
1 cup granulated sugar
1 cup creamy peanut butter
6 cups crispy rice cereal
1 cup semisweet chocolate chips
1 cup butterscotch chips
Instructions:
Grease a 9x13-inch baking dish and set aside.
In a large saucepan, combine the light corn syrup and granulated sugar. Cook over medium heat, stirring frequently, until the mixture begins to boil. Remove from heat immediately.
Stir in the creamy peanut butter until smooth and well combined.
Pour the peanut butter mixture over the crispy rice cereal in a large bowl. Stir until the cereal is evenly coated.
Press the cereal mixture into the prepared baking dish, spreading it out evenly.
In a microwave-safe bowl, combine the semisweet chocolate chips and butterscotch chips. Microwave in 30-second intervals, stirring after each interval, until the chips are melted and the mixture is smooth.
Pour the melted chocolate and butterscotch mixture over the cereal layer, spreading it evenly with a spatula.
Allow the Scotcheroos to cool at room temperature until the topping is set. For faster setting, you can place the dish in the refrigerator for about 30 min.
