Ingredients (for 6 bars):

For the Base:

  • 1 cup raw almonds
  • 1 cup Medjool dates, pitted

For the Caramel Layer:

  • 1 cup Medjool dates, pitted
  • 2 tbsp almond butter
  • 1 tsp vanilla extract
  • 2-3 tbsp water (as needed)

For the Nougat Layer:

  • 1/2 cup raw cashews, soaked for at least 2 hours
  • 2 tbsp coconut flour
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1-2 tbsp water (as needed)

For the Chocolate Coating:

  • 1/2 cup raw cacao powder
  • 1/2 cup coconut oil, melted
  • 1/4 cup maple syrup

Toppings:

  • 1/4 cup raw peanuts, roughly chopped

Instructions:

  1. In a food processor, blend the raw almonds until they are finely ground.
  2. Add the pitted dates and process until the mixture becomes sticky and holds together.
  3. Press the mixture evenly into the bottom of a parchment-lined 9x5-inch loaf pan.
  4. In the food processor, blend the pitted dates, almond butter, and vanilla extract until smooth. Add water gradually to reach a thick, caramel-like consistency.
  5. Spread the caramel mixture evenly over the almond-date base.
  6. Drain and rinse the soaked cashews.
  7. In the food processor, blend the cashews, coconut flour, maple syrup, and vanilla extract until smooth, adding water as needed to reach a thick, creamy consistency.
  8. Spread the nougat mixture evenly over the caramel layer.
  9. Sprinkle the roughly chopped raw peanuts over the nougat layer, pressing them in gently.
  10. In a small bowl, whisk together the raw cacao powder, melted coconut oil, and maple syrup until smooth.
  11. Pour the chocolate mixture over the peanut layer, spreading it evenly.
  12. Freeze the bars for at least 1-2 hours, or until firm.
  13. Once set, remove from the loaf pan, cut into 6 bars, and enjoy!
