  3. In a blender or food processor, combine the blueberries, softened cream cheese, honey (or maple syrup), and lemon juice. Blend until smooth and creamy.
  4. Spoon the blueberry mixture over the nut and date base, dividing it evenly between the two cups.
  5. In a mixing bowl, beat the softened cream cheese with honey (or maple syrup) and vanilla extract until smooth and creamy.
  6. Spoon the vanilla mixture over the blueberry layer, dividing it evenly between the two cups.
  7. Refrigerate the cheesecakes for at least 2 hours, or until set.
