Jalepeno Poppers

Jalapeño poppers are a crowd-pleasing tailgating snack that combines spicy jalapeños stuffed with creamy cheese and wrapped in crispy bacon. These poppers are baked until the bacon is perfectly crisp and the cheese is gooey, making them an irresistible treat. This recipe is ideal for sharing, but we won’t keep track of how many you keep for yourself! 

Ingredients (for 24 poppers):

  • 12 large jalapeño peppers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 12 slices bacon
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • Toothpicks for securing the bacon

Instructions:

  1. Preheat the oven to 400°F. Line a baking sheet with aluminum foil and place a wire rack on top.
  2. Slice the jalapeños in half lengthwise and remove the seeds and membranes.
  3. In a bowl, mix together the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper.
  4. Spoon the cheese mixture into each jalapeño half, packing it in generously.
  5. Wrap each stuffed jalapeño with a slice of bacon, securing it with a toothpick.
  6. Place the wrapped jalapeños on the wire rack and bake for 20-25 min. or until the bacon is crispy and the cheese is melted.
  7. Remove from the oven and let cool slightly before serving.

Ingredients

Dough:

  • 2 cups flour
  • 1 cup olive oil
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 cup milk
  • Water

 Filling:

  • 1 onion, diced
  • 1 lb ground beef
  • A pinch of salt
  • 1/2 cup water
  • 1 cup tomato sauce

 Method

  1. Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
  2. In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.  
  3. Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat. 
  4. Dust a flat surface with flour, and roll out the dough into a flat sheet. 
  5. Use a ramekin or cup to cut out circles. 
  6. Add a dollop of beef-tomato mixture to the center of each circle. 
  7. Pinch the dough into a little pocket.
  8. Bake in the oven at 350° F for 15 minutes.
