Soft Pretzels

Soft Pretzels with Mustard are a classic tailgating snack. What’s more is that they are surprisingly easy to make yourself! These warm, doughy pretzels with a crisp exterior are the perfect pair for tangy mustard and cheering on your favorite team! 

Ingredients:

  • 1 1/2 cups warm water (110°F)
  • 2 tsp active dry yeast
  • 1 tbsp granulated sugar
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 1/4 cup baking soda
  • 1 large egg, beaten (for egg wash)
  • Coarse sea salt for sprinkling
  • Mustard for serving

Instructions:

  1. In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for 5 min. until frothy.
  2. In a large bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture. Mix until a dough forms.
  3. Turn the dough out onto a floured surface and knead for about 5-7 min. or until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until doubled in size.
  4. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  5. Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel shape.
  6. In a large pot, bring 4 cups of water and the baking soda to a boil. Gently place each pretzel into the boiling water for about 30 seconds, then remove with a slotted spoon and place on the prepared baking sheet.
  7. Brush each pretzel with the beaten egg and sprinkle with coarse sea salt.
  8. Bake for 12-15 min. or until the pretzels are golden brown.
  9. Let cool slightly before serving with mustard.

Ingredients

Dough:

  • 2 cups flour
  • 1 cup olive oil
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 cup milk
  • Water

 Filling:

  • 1 onion, diced
  • 1 lb ground beef
  • A pinch of salt
  • 1/2 cup water
  • 1 cup tomato sauce

 Method

  1. Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
  2. In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.  
  3. Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat. 
  4. Dust a flat surface with flour, and roll out the dough into a flat sheet. 
  5. Use a ramekin or cup to cut out circles. 
  6. Add a dollop of beef-tomato mixture to the center of each circle. 
  7. Pinch the dough into a little pocket.
  8. Bake in the oven at 350° F for 15 minutes.
  9. Enjoy!
