Beer Brats

These beer brats offer a flavorful, crowd-pleasing meal option for your tailgate, with juicy sausages and sweet, caramelized onions that are sure to be a hit. The heartiness of this dish makes it a perfect choice for serving a hungry crowd at your next tailgate!

Ingredients (for 8 servings):

  • 8 bratwursts
  • 1 large onion, thinly sliced
  • 1 cup beer (lager or ale works well)
  • 2 tbsp olive oil
  • 1 tbsp brown sugar
  • 1 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 hot dog buns
  • Optional: mustard, sauerkraut, or additional toppings

Instructions:

  1. In a large skillet or Dutch oven, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for 10-15 min. until the onions are soft and starting to caramelize.
  2. Stir in the brown sugar, butter, salt, and pepper. Continue to cook for another 5 minutes, until the onions are deeply caramelized. Remove from heat and set aside.
  3. Place the bratwursts in a large pot and pour the beer over them. Bring to a simmer over medium heat and cook for 15-20 min. until the brats are cooked through.
  4. Preheat the grill to medium-high heat. Remove the bratwursts from the beer and grill them for 5-7 min., turning occasionally, until they are nicely browned and have grill marks.
  5. Serve the grilled brats in hot dog buns, topped with caramelized onions. Add optional toppings like mustard or sauerkraut if desired.

Ingredients

Dough:

  • 2 cups flour
  • 1 cup olive oil
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 cup milk
  • Water

 Filling:

  • 1 onion, diced
  • 1 lb ground beef
  • A pinch of salt
  • 1/2 cup water
  • 1 cup tomato sauce

 Method

  1. Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
  2. In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.  
  3. Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat. 
  4. Dust a flat surface with flour, and roll out the dough into a flat sheet. 
  5. Use a ramekin or cup to cut out circles. 
  6. Add a dollop of beef-tomato mixture to the center of each circle. 
  7. Pinch the dough into a little pocket.
  8. Bake in the oven at 350° F for 15 minutes.
