Pulled Chicken Tacos

These juicy pulled chicken tacos are a fantastic tailgating snack that can even be hearty enough to serve as lunch or dinner on long game days. Made in a slow cooker, the chicken is easy to transport and pop into your perfect taco in the parking lot!

Ingredients (for 10-12 tacos):

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 (12 oz) jar salsa
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 12 small soft tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup salsa or pico de gallo
  • 1 cup guacamole
  • Optional: chopped cilantro, lime wedges, sour cream

Instructions:

  1. Place the chicken breasts in the slow cooker. Pour the chicken broth and salsa over the chicken.
  2. Sprinkle the chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper over the top.
  3. Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is tender and easily shredded.
  4. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and mix it with the juices.
  5. Warm the tortillas in a dry skillet or wrap them in foil and heat them in the oven.
  6. To assemble the tacos, fill each tortilla with pulled chicken and top with shredded cheddar cheese, salsa or pico de gallo, and a dollop of guacamole.
  7. Garnish with optional toppings like chopped cilantro, lime wedges, or sour cream.

Ingredients

Dough:

  • 2 cups flour
  • 1 cup olive oil
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 cup milk
  • Water

 Filling:

  • 1 onion, diced
  • 1 lb ground beef
  • A pinch of salt
  • 1/2 cup water
  • 1 cup tomato sauce

 Method

  1. Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
  2. In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.  
  3. Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat. 
  4. Dust a flat surface with flour, and roll out the dough into a flat sheet. 
  5. Use a ramekin or cup to cut out circles. 
  6. Add a dollop of beef-tomato mixture to the center of each circle. 
  7. Pinch the dough into a little pocket.
  8. Bake in the oven at 350° F for 15 minutes.
