Elote Salad

This delicious appetizer captures all the bold flavors of traditional Mexican-style street corn and turns it into a shareable, dippable dish. Serve this tangy and creamy snack with crispy tortilla chips for an irresistible addition to your tailgating party! 

Ingredients (for 6-8 servings):

  • 4 cups corn kernels (fresh, frozen, or canned, drained)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup crumbled cotija cheese (plus more for topping)
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 2 tbsp lime juice
  • 2 tbsp chopped fresh cilantro (plus more for garnish)
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions:

  1. Preheat the oven to 350°F.
  2. If using fresh or frozen corn, cook the kernels in a skillet over medium heat until lightly charred, about 5-7 min. If using canned corn, simply drain and set aside.
  3. In a large bowl, mix together the mayonnaise, sour cream, cotija cheese, chili powder, paprika, lime juice, and chopped cilantro.
  4. Stir in the cooked corn and season with salt and pepper to taste.
  5. Transfer the mixture to an oven-safe dish and bake for 15-20 min. or until heated through.
  6. Remove from the oven and top with extra cotija cheese and cilantro for garnish.
  7. Serve warm with tortilla chips for dipping.

Ingredients

Dough:

  • 2 cups flour
  • 1 cup olive oil
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 cup milk
  • Water

 Filling:

  • 1 onion, diced
  • 1 lb ground beef
  • A pinch of salt
  • 1/2 cup water
  • 1 cup tomato sauce

 Method

  1. Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
  2. In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.  
  3. Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat. 
  4. Dust a flat surface with flour, and roll out the dough into a flat sheet. 
  5. Use a ramekin or cup to cut out circles. 
  6. Add a dollop of beef-tomato mixture to the center of each circle. 
  7. Pinch the dough into a little pocket.
  8. Bake in the oven at 350° F for 15 minutes.
