Ingredients (serves 4):
4 large eggs
1 cup milk
1 cup all-purpose flour
1/2 tsp salt
1/2 cup cooked bacon, chopped
1 cup shredded cheese (cheddar or Gruyère)
2 tbsp fresh herbs (such as chives or parsley), chopped
4 tbsp unsalted butter
Black pepper, to taste
Instructions:
Preheat your oven to 425°F (220°C).
In a mixing bowl, whisk together the eggs, milk, flour, and salt until smooth. Stir in the chopped bacon, shredded cheese, and fresh herbs.
In a large oven-safe skillet (preferably cast iron), melt the butter over medium heat until it starts to foam and is golden. Ensure the butter coats the bottom and sides of the skillet.
Pour the batter into the hot skillet and immediately transfer it to the preheated oven. Bake for 20-25 min. or until the edges are puffed and golden brown.
Carefully remove the skillet from the oven. Let it cool slightly before slicing. Season with black pepper and additional herbs, if desired. Serve warm.
