Lemon Herb Chicken

This delicious chicken recipe is packed with fresh, zesty flavors. The chicken is marinated in a fragrant mixture of lemon, garlic, and herbs, then cooked to juicy perfection. It is an easy, flavorful dish that's perfect with roasted vegetables, rice, or a fresh salad! The bright lemon and herbs make it a refreshing and satisfying meal.

Ingredients (serves 4):

  • 4 boneless, skinless chicken breasts
  • 3 tbsp olive oil
  • Juice and zest of 2 lemons
  • 4 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, for garnish
  • Lemon wedges, for serving

Instructions:

  1. In a small bowl, mix together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, rosemary, salt, and pepper. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 min. or up to 2 hours for more intense flavor.
  2. Preheat a skillet over medium heat. Remove the chicken from the marinade, letting the excess drip off. Cook the chicken breasts for 6-7 min. per side, until golden brown and fully cooked through (internal temperature of 165°F). Add a bit more olive oil if needed.
  3. Let the chicken rest for 5 min. after cooking. Garnish with fresh parsley and serve with lemon wedges.
