4 medium red or yellow onions, peeled and sliced into thick rounds
2 tbsp olive oil
2 tbsp unsalted butter
2 tbsp balsamic vinegar
1 tbsp granulated sugar
1 tsp fresh thyme leaves (or ½ tsp dried thyme)
1 sheet store-bought puff pastry, thawed
½ tsp salt
¼ tsp black pepper
Instructions:
Preheat your oven to 400°F (200°C).
Heat olive oil and butter in an oven-safe skillet (10-inch) over medium heat. Add onion slices in a single layer and cook for 5-7 min., flipping once, until they begin to soften and caramelize.
