Ingredients (for 4 servings):
6 bone-in, skin-on chicken thighs
2 tbsp olive oil
3 tbsp freshly squeezed lemon juice (about 1 lemon)
2 tsp lemon zest
3 cloves garlic, minced
1 tbsp chopped fresh rosemary (or 1 tsp dried)
1 tbsp chopped fresh parsley (plus more for garnish)
1 tsp dried oregano
1/2 tsp paprika
Salt and pepper to taste
Instructions:
In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, rosemary, parsley, oregano, paprika, salt, and pepper.
Place the chicken thighs in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is coated. Cover and refrigerate for at least 30 min (or up to 4 hours for more flavor).
Preheat the oven to 400°F (200°C). Line a baking sheet or large baking dish with parchment paper or lightly grease it with olive oil.
