Lemon and Herb Chicken Thighs

This recipe elevates simple chicken thighs with a bright and zesty marinade of lemon, garlic, and fresh herbs. Baking ensures juicy, golden perfection, making it a healthy and flavorful choice for weeknight dinners or meal prep. Use boneless, skinless chicken thighs for a lighter version, but adjust the cooking time accordingly.

Ingredients (for 4 servings):

  • 6 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 3 tbsp freshly squeezed lemon juice (about 1 lemon)
  • 2 tsp lemon zest
  • 3 cloves garlic, minced
  • 1 tbsp chopped fresh rosemary (or 1 tsp dried)
  • 1 tbsp chopped fresh parsley (plus more for garnish)
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, rosemary, parsley, oregano, paprika, salt, and pepper.
  2. Place the chicken thighs in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is coated. Cover and refrigerate for at least 30 min (or up to 4 hours for more flavor).
  3. Preheat the oven to 400°F (200°C). Line a baking sheet or large baking dish with parchment paper or lightly grease it with olive oil.
  4. Arrange the marinated chicken thighs skin-side up on the prepared baking sheet. Bake for 35-40 min., or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
  5. If desired, broil the chicken for 2-3 min. at the end of the cooking time to further crisp up the skin.
  6. Sprinkle with additional fresh parsley before serving. Pair with roasted vegetables, a side salad, or rice for a complete meal.
