Sweet Potato Chili

A hearty and delicious twist on classic chili, this recipe features tender sweet potatoes, protein-packed black beans, and a medley of warming spices. Its rich, flavorful base of diced tomatoes and chili spices makes it a perfect meal for cozy nights or meal prep. This chili is freezer-friendly, making it a great option for meal prep.

Ingredients (for 4-6 servings):

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and cubed
  • 1 bell pepper, diced
  • 1 14-oz can black beans, drained and rinsed
  • 1 14-oz can diced tomatoes
  • 2 cup vegetable broth
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • Optional toppings: avocado slices, cilantro, lime wedges, or shredded cheese

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cooking until softened, about 3 min.
  2. Stir in chili powder, cumin, smoked paprika, and cayenne pepper (if using). Cook for 1 min. to bloom the spices.
  3. Add sweet potatoes and bell pepper, stirring to coat them in the spice mixture. Cook for 3-4 min.
  4. Pour in the diced tomatoes and vegetable broth. Bring to a boil, then reduce heat to low. Cover and simmer for 20 min., stirring occasionally, until the sweet potatoes are tender.
  5. Stir in the black beans and simmer for an additional 5 min. to allow flavors to blend.
  6. Season the chili with salt and pepper to taste. Adjust the thickness by adding more broth if needed.
  7. Ladle the chili into bowls and top with your choice of garnishes such as avocado, cilantro, lime wedges, or shredded cheese.
