Greek Quesadilla

This Mediterranean-inspired quesadilla combines the tangy flavors of feta cheese, briny olives, and sautéed spinach inside a golden, crisp tortilla. Quick, wholesome, and loaded with vibrant ingredients, these Greek quesadillas are perfect for a light dinner or a shareable appetizer. Serve with creamy tzatziki for a refreshing dipping sauce!

Ingredients (for 2 servings):

  • 2 whole-wheat tortillas
  • 1 cup fresh spinach, chopped
  • 1/4 cup crumbled feta cheese
  • 2 tbsp sliced black or Kalamata olives
  • 1 clove garlic, minced
  • 1 tsp olive oil
  • 1/4 cup tzatziki sauce, for serving

Instructions:

  1. Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.
  2. Stir in the chopped spinach and cook for 2–3 min. until wilted. Remove from heat.
  3. Place one tortilla on a clean surface. Spread the cooked spinach evenly over half of the tortilla, then sprinkle with feta cheese and olives. Fold the tortilla in half to enclose the filling.
  4. Heat a non-stick skillet over medium heat. Place the folded quesadilla in the skillet and cook for 2–3 min. on each side, or until the tortilla is golden brown and crispy. Repeat with the second tortilla.
  5. Slice each quesadilla into wedges and serve warm with tzatziki on the side.
