Sloppy Lentil Burger

This plant-based twist on a classic comfort food is hearty, flavorful, and ready in just 30 min. Protein-packed lentils are simmered in a tangy, smoky sauce and served on toasted buns for a quick and satisfying vegetarian dinner. This recipe is proof that comfort food can also be healthy and plant-based! For a gluten-free option, serve over baked sweet potatoes or on lettuce wraps instead of buns.

Ingredients (for 4 servings):

  • 1 cup cooked brown or green lentils (or 1 can, drained and rinsed)
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (any color)
  • 1 tbsp olive oil
  • 3/4 cup tomato sauce
  • 2 tbsp tomato paste
  • 1 tbsp maple syrup or brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • 4 hamburger buns, toasted

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add the onion and bell pepper, sautéing for 4–5 min. until softened.
  2. Stir in the cooked lentils, tomato sauce, and tomato paste. Mix well to combine.
  3. Add the maple syrup, apple cider vinegar, smoked paprika, garlic powder, chili powder, salt, and pepper. Stir and let the mixture simmer for 5–7 min., allowing the flavors to blend and the sauce to thicken.
  4. Spoon the lentil mixture onto toasted buns and serve immediately.
