Beer Cheese Dip

This creamy, tangy, and ultra-cheesy dip is infused with the bold flavor of beer, making it a game-day favorite. Perfect for dunking soft pretzels, crunchy pretzel bites, or even veggies, this warm dip will keep your Super Bowl crowd coming back for more! A mild lager will keep the flavor smooth, while an ale or stout will add more depth. For extra creaminess, add a splash of heavy cream while melting the cheese.

Ingredients (for 6-8 servings):

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup beer (lager or ale works best)
  • 1 cup whole milk
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 2 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Salt and black pepper to taste

Instructions:

  1. In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1 min until lightly golden.
  2. Slowly whisk in the beer, then the milk, stirring constantly to prevent lumps. Let it simmer for 2-3 min. until slightly thickened.
  3. Stir in Dijon mustard, garlic powder, smoked paprika, and cayenne (if using).
  4. Reduce the heat to low and gradually stir in the cheddar and Monterey Jack cheeses until smooth and creamy. Season with salt and black pepper to taste.
  5. Transfer to a bowl and serve warm with soft pretzels, pretzel bites, or crunchy pretzels.

Ingredients

Dough:

  • 2 cups flour
  • 1 cup olive oil
  • 2 tbsp sugar
  • 2 tsp salt
  • 1/4 cup milk
  • Water

 Filling:

  • 1 onion, diced
  • 1 lb ground beef
  • A pinch of salt
  • 1/2 cup water
  • 1 cup tomato sauce

 Method

  1. Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
  2. In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.  
  3. Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat. 
  4. Dust a flat surface with flour, and roll out the dough into a flat sheet. 
  5. Use a ramekin or cup to cut out circles. 
  6. Add a dollop of beef-tomato mixture to the center of each circle. 
  7. Pinch the dough into a little pocket.
  8. Bake in the oven at 350° F for 15 minutes.
