Spaghetti Carbonara is often prepared with a cream sauce, but the classic recipe actually uses eggs. Give it a try, and you'll be delighted with the traditional preparation.
Ingredients (serves 4)
1 cup diced raw ham
1 lb pasta
4 eggs
1 1/2 cups grated Parmesan or Pecorino cheese
Salt and pepper to taste
Instructions
Dice the ham and fry it until crispy.
Cook the pasta in plenty of salted water until al dente. Reserve about 1/2 cup (approx. 100 ml) of the pasta cooking water before draining.
Whisk the eggs with the cheese and season with salt and pepper.
Add the reserved cooking water to the pan with the ham and bring to a boil. Add the pasta, stir well, and then add the egg and cheese mixture.
Allow the eggs to set slightly, then serve immediately.
