Lasagna with Salmon and Spinach

A popular variation of lasagna, this classic combines spinach and salmon. The mix of fish and vegetables tastes wonderful and is a nice change from the traditional tomato sauce.


Ingredients (serves 4)

  • 10 oz frozen creamed spinach
  • 1/2 cup water
  • 1/2 cup cream
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 1/4 cups milk
  • 1 pinch nutmeg
  • 12 lasagna sheets
  • 1 lb salmon fillets
  • 2 cups grated mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F.
  2. Thaw the spinach over low heat in a pot with a little water and half of the cream. Season with salt and pepper.
  3. Melt the butter in a separate saucepan, add the flour, and brown it slightly. Gradually add the milk, then the remaining cream and water, stirring constantly. Season with nutmeg, salt, and pepper. Adjust the consistency with more flour if too thin or more milk if too thick.
  4. Cut the salmon into small cubes while it is still semi-frozen.
  5. In a baking dish, layer the sauce, lasagna sheets, spinach, and salmon cubes, repeating until all ingredients are used. Top with grated mozzarella cheese.
  6. Bake in the oven for 30 minutes, then serve.
