For an unexpected twist to this refreshing appetizer, try it with sardines! Take 2 cans of sardines, and remove the bones and skin. Roughly mash them up in a bowl. In a second bowl, mix together 10 mint leaves, and 4 finely chopped cilantro stalks. Add 1/2 a cucumber cut into matchsticks and 2 thinly sliced spring onions. Soak your rice paper in a little bit of hot water and lay it out on a clean surface. Place a lettuce leaf on top, some mashed sardine and some of the cucumber mixture. Roll up tightly, cover in plastic wrap and repeat with remaining spring rolls. Place the rolls in the refrigerator for at least 1 hour. When ready to serve, unwrap the rolls, cut in half, and enjoy with your homemade dipping sauce of choice.
