Rillettes are the perfect topping for an open-faced sandwich—you really don't need anything else. Try sardine rillettes for its overwhelming simplicity and delicious, savory taste. Take 2 cans of sardines, remove the bones, break them up roughly and add 1/2 cup cream cheese, 2 thinly sliced shallots, salt, pepper and for that little extra something, 1/2 a bundle of finely chopped chives . Mix well. Spread desired amount on a slice of your favorite bread, and enjoy! Store leftovers in the fridge in an airtight container.
