Veggie salad

There's no better time than summer to vary your salads and add as much color as possible to your plate.

In a mixing bowl, add a bit of prepared, cooled couscous, 1 diced cucumber (drained), 1 1/2 cup halved cherry tomatoes, a small can of drained red kidney beans and 1/2 a lettuce head cut into strips. Dress with balsamic vinaigrette, and serve chilled. Tip: Turn this easy salad into a Mason jar work lunch—if you want something more filling, add a few cooked chicken cubes and a hard-boiled egg.
