Melon soup

The beauty of melon soup is that you can serve it as an appetizer or a dessert! The only thing you need to change is the garnish: fresh herbs for a savory version, and melon balls for a sweet one.

Simply blend 1 small melon with 5 fresh mint leaves and some pepper, then chill. You can also add 2 tablespoons of Port for the sweet version.
