Whipped cherries

Fill your tacos with whipped cream and cherry jam. For the jam: wash and pit enough cherries to make one quart. Finely chop them up and add 1/4 cup lemon juice and 1 packet of powdered pectin. Bring to a boil on the stove, stirring continuously. Add 4 1/2 cups sugar and return the mixture to boiling. Keep stirring the whole time. Remove from heat and skim off any foam if necessary. Don't hesitate to experiment with other fruit jams of your choice!

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
