M&M ice cream

Place 3 scoops of vanilla ice cream into a chocolate tortilla, drizzle with chocolate syrup and sprinkle with M&M's and chocolate sprinkles for the ultimate scrumptious treat! Tip: to make the chocolate tortillas, sift 2/3 cup flour with 2 tablespoons unsweetened cacao nibs. Beat 3 egg whites into soft peaks, and carefully add the flour mixture with 3 1/2 tablespoons of salted butter (melted). Stir to combine. Chill for 30 minutes in the fridge, then make your tortillas on a clean work surface covered with greaseproof paper. Bake the tortillas for 8 minutes at 350 °F. When taking them out of the oven, fold them into taco shells for their final shape.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
