Why not take a detour from the classic tomato-based gazpacho and go for a refreshing minty carrot-flavored one instead? Place roughly chopped onions and carrots into a blender or food processor. Add raw seeded and chopped bell peppers, crushed garlic, fresh mint leaves, tomato paste and a bit of salt to taste. Mix until smooth. Grind some fresh cracked black pepper on top, and put in the fridge for a few hours to let the flavors meld. When ready to serve, garnish with sliced radishes, radish stems and thinly sliced carrots.
