Vegetarian Vietnamese bo bun

Vietnamese bo bun (officially called Bun bo Nam Bo) is a delicious cold rice noodle salad traditionally served with sliced sauteed beef, crunchy vegetables, flavorful herbs and sometimes a few chopped up fried spring rolls. Cut down on cooking time and calories by cutting out the meat! Cook vermicelli rice noodles according to package directions, rinse with cold water and set aside. Grate carrots and chop up cucumber into large matchsticks. For the sauce, mix together fish sauce, sugar, lime juice, hot water and grated garlic. Combine the vegetables with the noodles, pour the sauce over, add herbs (fresh chopped cilantro and mint). Serve immediately.
