Frittatas are a brunch classic that also makes a great protein-packed dinner. Try this easy no-bake version: Combine eggs, oregano, garlic powder, salt and pepper in a mixing bowl, and stir together, using a whisk. Set aside. Brown chopped bacon in a skillet. Add peas and chopped red pepper until lightly browned. Toss in spinach and stir constantly to coat in the bacon grease until wilted. Turn the heat to medium-low, spread out the bacon and veggies evenly in the pan, then pour in the egg mixture. Tilt the pan so it covers the whole bottom surface. Cover the skillet with a lid, and let cook for 6 to 8 minutes or until eggs are set.
