Pasta carbonara with diced Prosciutto

For an express version of this Italian classic, cook pasta according to package instructions, drain and save 1/2 cup of the cooking water. Stir together 2 eggs and 3/4 cup grated Parmesan, using a whisk. Cook diced Prosciutto in a skillet until nicely browned, then add the pasta and egg mixture, tossing well to combine. Season with salt and pepper to taste. Slowly spoon in the preserved cooking water until you get the right consistency. Garnish with fresh basil, and serve immediately.
