Fish tartare

For a quick, no-cook meal, try fish tartare. Make sure you select fish that's super fresh. Salmon and sea bream are good options. Place the fish in the freezer for 30 minutes to make it easier to chop. Once you've chopped it up into an even dice, make it compact (you can use a glass for shaping), drizzle it with lemon juice and season with salt, pepper and the fresh herbs of your choice. Let sit in the fridge for 1 hour before serving with leafy greens on top. Don't hesitate to add diced avocado, tomatoes, etc.
