Quesadillas

Quesadillas are a Mexican classic that can be made with infinite ingredient combinations. But to keep it authentic, make with cooked beef or chicken, diced white onions and Oaxaca cheese cut into strings. Garnish flour or corn tortillas with the mixture, fold over and grill before cutting into triangles to serve. They're even more delicious when dipped into guacamole or salsa.
