Almond cookies

Ingredients: 3 cups almond flour + 1 1/2 cups powdered sugar + 2 egg whites

Preheat the oven to 325 °F. Pulse the almond flour and 1/2 cup sugar in a food processor, and pour into a large mixing bowl. Beat the egg whites separately into soft peaks. Add the rest of the sugar gradually, beating until the mixture thickens and becomes glossy. Fold the egg whites into the almond flour and sugar preparation. Mix well to form a sticky, firm dough. Shape the dough into small balls, and place onto a baking sheet lined with parchment paper. Flatten the balls gently, then bake for 12 to 15 minutes until the tops start to crack, and the cookies are lightly golden on the bottom. Let cool for 5 minutes before transferring to a wire rack to cool completely.
