Canning 101: How to master the basics of home food preservation

Spicy peach tomato salsa

Ingredients: 9 cups fresh chopped peaches + 4 cups fresh diced tomatoes + 2 cups diced red onions + 1 diced red bell pepper + 1/2 cup diced jalapeno + 2 tablespoons fresh lime juice + 1 cup vinegar + 3 chopped garlic cloves + 1 tablespoon cayenne pepper + 3 tablespoons honey 

Combine the peaches with the lime juice, tomatoes, onions, bell pepper, garlic and jalapeno in a large mixing bowl. Add the vinegar, honey and cayenne. Bring to a boil on medium heat, and cook for 3 minutes, stirring constantly. Reduce heat to a simmer. Pour the hot salsa into clean, warmed jars, leaving about 1/4-inch space on top. Wipe the rim clean, and screw the lid on tight. Proceed with the water canning method.
