Zucchini-salmon roll-ups

For this simple, tasty recipe, thinly slice your zucchinis and blanch them for a few minutes in boiling water. Drain and let cool, then spread with a mixture of cream cheese, dill, salt and ground pink peppercorns, then add a strip of smoked salmon and roll. These can be stored in the fridge overnight.
