Pumpkin

Take pumpkin slices with the skin on, and toss with a little olive oil and a few spices to nicely balance the sweetness of the pumpkin and sea salt. Arrange in one layer on a baking sheet lined with greaseproof paper, and pop into a 400 °F oven for 20 minutes. This recipe is very convenient to prepare during the week with a hearty salad. It goes beautifully with feta or goat cheese as a meal accompaniment, too.
