Beetroot

Roasting is a cooking method that really showcases root vegetables such as beets. If you can find beets of different colors, that's even better. Add a bit of balsamic vinegar 10 minutes before the cook time is over, as it goes particularly well with their distinctive taste. If you are not using fresh beets, pre-cook them slightly by steaming them. Roast for 30 minutes at 400 °F.
