If you can find old-fashioned yellow, white and purple carrots, use them all, as it ups the presentation factor of your dish. Pre-cook the carrots slightly by steaming them, then place in a baking dish in a single layer with olive oil and salt. Roast for approximately 30 minutes at 400 °F. Serve with feta or goat cheese and a good vinaigrette. It's a sensation!
