Pumpkin risotto

Sweat chopped onion in a pan with a little oil. Add risotto rice and toast until translucent. Then add broth and diced pumpkin. Continue adding broth gradually until it is fully absorbed by the rice. Add Parmesan, a bit of blue cheese and mix well. Delish!
