Parmesan cream soup

This ultimate creamy recipe is perfect for a nice dinner starter. To make, heat olive oil in a saute pan, add minced onion and cook in low heat for 5 minutes. Add 1 3/4 cups of grated Parmesan, a bit of salt, milk and cream. Stir until the cheese melts, then add vegetable or chicken broth, a bit more milk and cream. Bring to a boil on medium heat. Meanwhile, cut fresh Parmesan into small shavings. As soon as the soup begins boiling, remove from heat and stir well. If the consistency is too thick, add more broth. Adjust seasoning to taste, and serve. Garnish with the Parmesan shavings and fresh basil leaves.

Method

  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!
