If you're in Spain, during Lent, you can't forgo potaje de vigilia, which is one of the most traditional dishes at this time of year. It is made with chickpeas which are soaked and boiled, then combined with spinach, garlic, onion and salt cod, and served with chopped boiled egg and a little parsley.
