Chipa - Paraguay

The chipa is a traditional Easter bread from Paraguay. It is made with tapioca starch, egg, cheese, butter and salt. A little wheat or corn flour can be added to improve the consistency. Although chipa rolls are eaten all year round, at Easter they are often homemade—the preparation from scratch making up part of the celebrations. Families who have a "tatakua" often cook the chipa in this traditional oven on a base of banana leaves, which gives them a unique, very special flavor.
Once a batch of chipa is ready, it is common practice to visit relatives and friends to share these home baked treats with them.
