This recipe is divinely aromatic and surprisingly simple. In a mixing bowl, combine 1 pound sausage meat (removed from its casing), 2 minced and sauteed shallots, 4 finely chopped anchovies and 3 fried and chopped slices of pancetta or smoked bacon. Add 2 sprigs rosemary finely chopped, 2 tablespoons breadcrumbs and 2 tablespoons cream sherry. Mix thoroughly and season well. When stuffing your turkey, you can also add 1 orange, halved, and a large bunch of thyme and sage to the cavity, before sealing up and roasting.
