Try this hearty and wholesome turkey stuffing, full of veggies and fresh herbs. Saute 1 cup finely chopped celery and 1 cup minced onion in butter, stirring frequently, until tender. Stir in 1/4 cup finely chopped fresh parsley, 1 tablespoon chopped fresh sage, 1 1/2 teaspoons chopped fresh marjoram, 3/4 teaspoon chopped fresh tarragon and 1/2 teaspoon salt. In a large bowl, mix 7 cups soft bread cubes, 2 medium carrots, shredded, 1 medium zucchini, shredded, and 1 cup finely chopped mushrooms. Add celery mixture, and stir well to combine.
