This country-style stuffing is packed with herbs and the goodness of mushrooms. Saute finely chopped Cremini mushrooms and leeks in butter. Add minced green onions and chopped celery, minced garlic, salt, pepper and a selection of fresh herbs, all finely chopped: Italian parsley, oregano, sage and thyme. Cook until the celery is tender. Mix with bread cubes soaked in milk and an egg, then add some coarsely grated Parmesan cheese and mix thoroughly.
