Frico

Frico is simply a shredded cheese and potato wafer, native to the region of Friuli-Venezia Giulia in northeast Italy. It's made by baking or frying until crisp and requires higher-fat hard cheeses such as Asiago to prepare. Commonly served as a garnish for soups or stews, it becomes malleable during the cooking process and can even be used to create bowls to serve certain foods in.
