Guajillo's in San Antonio serves great, authentic Mexican eats with a nice, healthy kick. Considering its name is also a type of chile pepper, it's not surprising that you can find plenty of picante dishes on the menu to feed your fancy. Pictured here is the shrimp soup, featuring peeled shrimp in a spicy broth made with guajillo and arbol chilies. Also FYI: the house salsa has a major bite to it, in case you're going with anyone who can't handle the heat.

Dive into summer with this fresh, light and healthy mango salad!

INGREDIENTS

  • Peanuts
  • Carrot
  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce
  • Red onion, minced
  • Salt
  • Pepper

 

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
