Do not underestimate the power of a salad. Especially a Laotian salad marked "extremely spicy" on the menu. At Thip Khao in DC, you'll find some really excellent exotic eats, not all of which are ridiculously hot but certainly many with a nice kick. There is both a regular menu and jungle menu, the latter of which features a variety of animal parts you're likely not used to seeing (fried duck heads, grilled chicken hearts, fermented snakehead fish & pork sauce, etc.). If you're unsure, just ask your server before ordering something you won't be able to stomach.

INGREDIENTS

  • Peanuts
  • Carrot
  • Mango
  • Rocket
  • 2 limes
  • Olive oil
  • Soy sauce
  • Red onion, minced
  • Salt
  • Pepper

 

METHOD

  1. Lightly sautée the peanuts until golden.
  2. Take the carrots and cut into thin slices.
  3. Peel the mango and slice into thin strips.
  4. Squeeze the juice from 2 limes into a bowl, and add olive oil, soy sauce, minced onion, salt and pepper.
  5. In a bowl, toss together the mango, carrot, rocket, and lime-soy dressing.
  6. Enjoy!
