Frmo Kimchi to Sauerkraut: Here's Why You Should Eat More Fermented Foods

Homemade Sauerkraut
Sauerkraut is incredibly easy to make. All you need is a couple jars and the following ingredients!
Ingredients
- 2 heads of green cabbage
- 3 tbsp kosher salt
- 1 tsp caraway seeds
- 1 tsp juniper berries
- Bay leaves, to taste
Instructions
- Wash the cabbage well and cut into thin strips.
- Place in a bowl and add the salt. Mix well, squeezing with your hands, then add the rest of the ingredients.
- Pack the cabbage into sealable jars. Fill the jar with water, making sure the cabbage is completely submerged.
- Seal the jar and wait a day before adding water and an extra teaspoon of salt if necessary. Seal again and allow the cabbage to ferment for 2 weeks.
