Pumpkin Pie

Fresh, warm pumpkin pie is delightful on Thanksgiving Day, but you'll want to keep any pie left over in the fridge from then on out. (You can always reheat it before enjoying round 2!) It can keep there for up to 4 days, or you can wrap it snugly in plastic wrap and freeze it for 1 or 2 months. This will likely sacrifice some of its texture, but the taste will stay the same.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
