Meat Roasts

Forget about reheating meat roasts in the microwave. This will dry them up fast, leaving them tough and robbing them of their original flavor and juiciness. The best way to reheat the meat is by going back to the original method—the oven—and lowering the heat. This method works especially well for beef and pork roasts. For best results, heat the oven to 250°F, and place the leftover meat on a wire rack atop a rimmed baking sheet. Reheat the roast until the meat reaches an internal temperature of 120 degrees Fahrenheit. Then give the meat a quick sear on the stove in a hot, oiled skillet for about one minute per side (slightly longer, depending on size). This could take up to 1 1/2 hours depending on the amount leftover, but it's worth the wait!
