This open-faced sandwich hails from Denmark, and smorrebrod is the dense, dark rye bread that can be topped with pretty much anything. The Danish and many of their Scandinavian neighbors are known for eating lots of fish, so they often serve smorrebrod with pickled herrings, shrimp or smoked salmon.
